How we make them.
The argument for reprinting more often is margin, not appearance. A menu two years old is charging two-year-old prices on ingredients bought this week, and every plate sold at the old number is margin already gone. Against that, a reprint is small money.
Design it so reprinting is cheap: keep prices and seasonal items in a section or on a separate insert, leave white space so a new dish doesn’t force a redesign, and keep the file with us. Then an update is “change these four prices, drop the salmon”: a proof back and printing the same afternoon.
